Remove specialty grains
After the specialty grains have steeped for 30 minutes in the hot water, remove them from the brew kettle by lifting out the bag. You may want to use tongs or a large spoon to avoid burning your hand.
Hold the grain bag over the kettle until most of the liquid has drained out of the grains and into your wort. If you wish, you can place the bag in a large measuring cup or bowl. Any additional liquid can be added to the brew kettle as it heats. But please don't squeeze the bag: Doing so can introduce some undesirable particulates and flavors into your boil kettle.
After you've removed the grains, turn the heat back on and bring your wort to a boil.
Steve will demonstrate how to steep specialty grains on the next page.
