Recipe: Open Air Sansho Gose

Used with care, quality sansho pepper can deliver potent citrus character with only the slightest Sichuan-like tingle. From Open Air Brewing in Kobe, Japan, this Sansho Gose won gold at the 2025 World Beer Cup.

Ben Emrich, head brewer at Kobe’s Open Air and Nomodachi, describes this beer—aromatically powered by sansho pepper and Amarillo hops—as “citrus, sour, salty, and tingly. A perfect match for heaps of foods, but especially seafood.” Also see the Brewer’s Notes for the koji-rice variation that won gold at the 2025 World Beer Cup.
