Brent “Schmitty” Sapstead, Hold Out’s director of brewing, shares the recipe for this American pilsner collab made with a portion of potatoes—specifically, potato starch flour. Besides winning a local following, Spudweiser has earned the respect of peers: This beer won bronze in the Collaboration category at the 2024 Great American Beer Festival.

Want to try it? Hold Out will have Spudweiser on tap while it hosts the second annual Pinvitational, scheduled for March 1 in Austin. Organized in cooperation with Acopon Brewing of Dripping Springs, Texas, and Dutchess Ales of Wassaic, New York, the festival features cask-conditioned ales and lagers from more than 40 other breweries.
