Recipe: CLAG Cold Hawaii Double IPA

Kevin Kowalski, head brewer at CLAG in Sandusky, Ohio, shares this recipe for the brewery’s highly rated double hazy IPA. Generous additions of Nelson Sauvin in the whirlpool and dry hop power much of Cold Hawaii’s juicy-dank flavors, while Citra, Galaxy, and Simcoe add depth.

In describing how he uses different hops to amplify others, Kowalski alludes to culinary connections. For example, he compares including a bit of Galaxy in a juice-bomb IPA to baking a cake and adding a pinch of salt.

“The cake is sweet, but the salt boosts everything around it,” he says. Likewise, with Galaxy: “I don’t like the diesel quality in it, but I find that a little bit of Galaxy amplifies everything around it.”
