Paweł Lewandowski, head brewer at Mount in Mount Maunganui, New Zealand, shares this recipe for their bright IPA. This is an increasingly popular style in New Zealand and Australia that falls somewhere between West Coast and hazy—juicy but clear with moderate bitterness.

“It’s not an official style, so it’s our interpretation and how we see it in our brewery,” Lewandowski says. “There are a few breweries across New Zealand who are brewing their own thing.” At Mount, it’s “not hazy but has properties of hazy IPA—low IBUs, rounded and juicy flavor with soft bitterness—so it must be filtered and bright.” He compares it to what American brewers might call a “modern West Coast” but with a higher finishing gravity and more body.

Here we share the version with only New Zealand hops, but see the notes below for a version that includes American varieties, too.
