What Our Panel Thought
Aroma: “Very smoky, mild roast barley, hints of sour-mash bourbon, maple-soaked meat, with a slight acidic undertone. Booze and light sulfur mix with coconut and caramel.”
Flavor: “A balance of beer and wood. Both sides hit at once: roast malt meets wood char, sweet caramel meets oaky vanilla. A bit boozy and hot, with slight tobacco, a touch of smoke that turns to umami. The heat lingers into the aftertaste.”
Overall: “Very big and boozy. The oak is not overdone, but it is front and center. Wood lovers will enjoy this one.”
What the Brewers Say
“We took our unfiltered Palo Santo Marron aged in handmade wooden brewing vessels and aged it in not one, but two kinds of wood! First, it spends a month aging in our 10,000-gallon Palo Santo tanks made from South American ‘holy wood,’ which provides layers of caramel and sandalwood. Then, it spends 4 more months in bourbon barrels for notes of oaky vanilla and coconut.”
