While the traditional approach in New Zealand is to ferment an NZ pils with Chico or other clean ale strain, head brewer Brayden Rawlinson opts for 34/70 and pressure fermentation. That’s all part of a lager program that’s winning recognition from peers, including two gold medals in the 2024 New Zealand Beer Awards, earning this Wellington brewpub the title of Champion Micro Brewery.
