or Brasserie de Rochefort (Abbaye de Notre-Dame de Saint-Rémy), is a monastery brewery in the province of Namur, Belgium, and a member of the International Trappist Association.

The Abbey of Notre-Dame de Saint-Rémy was founded around the year 1230, initially as a convent for Cistercian nuns. After 2 centuries, the nuns traded location with monks from the abbey of Givet, 18 miles (30 km) away. The site was attacked by French troops in 1653 and destroyed. The monks then defiantly reconstructed the monastery, which survived until the French Revolution, when they were forced to flee once more as their wealth was confiscated and the buildings torn down. Cistercian brothers returned to the site in 1887 and determined to rebuild it.

Today, the abbey stands in a valley, separated from the town of Rochefort by a wooded hill. The monks observe the rule of St. Benedict, which divides the day into equal parts devoted to prayer, work, and rest. Part of the work takes place at the monastery brewery, which is mostly staffed by lay employees but supervised by one of the brothers.

The brewery was given greater importance through modernization in 1952 and again, when it was rebuilt, in the 1960s. Capacity today stands at around 34,000 US barrels (40,000 hl) per year, but to prevent commercialism from destroying the balance of prayer, work, and rest, output is capped at 21,300 US barrels (25,000 hl). The copper brewhouse itself is notable for being among the most beautiful in Belgium.

The brewery’s three top-fermented beers are simply numbered 6, 8, and 10. All are bottle-conditioned and, in addition to barley malt and hops, ingredients include wheat starch, brown and white sugars, and a small amount of coriander. Colors deepen in shades of brown and complexity increases as alcoholic strength increases in each of the offerings. The Rochefort beers are bottle-conditioned and, when kept well, tend to age beautifully.
