“Spruce tips collide with nuanced gin-botanical aromatics, earthy pine, a hint of oaky funk—one could live in this glass. Upon sipping, the experience is a directional shift, with heavy doses of lemon peel and flesh amid the more nuanced oak and spirit complements. Piney characteristics quickly fade into a lightly sweet malty body with balancing oaky tannin and distinct juniper-like bitterness. Light, crisp body goes down smoothly, and a nice lemonade-meets-ginger note arrives in the finish. Extremely well executed.”

“A saison brewed with foraged fireweed in 2023 and aged in neutral gin casks for 12 months. Before packaging, we steeped fresh-forage fir tips and primed with a housemade ‘mugolio,’ aka pine-cone syrup.”
