Whether it's building body through malt and adjunct choices, manipulating texture with savvy hops usage, balancing hops flavor and bitterness without alcohol, mashing regimens to reduce fermentability, or designing a beer recipe for the rigors of alcohol removal, this session will lay the groundwork for great non-alc and low-alc beer.
Panelists include:
Shawn Cooper, Cofounder, Halfway Crooks
Through both imaginative and classically rooted lagers (as well as award-winning Belgian styles and hoppy beers), Atlanta’s Halfway Crooks has earned a reputation amongst drinkers and fellow brewers for beers that feel both rooted in tradition and full of personality. Cofounder Shawn Cooper has put considerable energy into developing their Brevet line of NA beers, with both lager and IPA iterations, and will share what they’ve learned about building compelling flavor in a range of NA beer styles.
Chris Lohring, Founder, Notch Notch in Salem and Brighton, Massachusetts has for years been carefully executing tightly construction Czech- and German-style lagers as well as lower ABV pale ales—the vast majority of their beers clock in between 4 and 5% ABV—and recently expanded their lineup with NA beers that include Craft Pils, Blonde, and Hazy IPA. Founder Chris Lohring is a well-known stickler for details and process, and will share what he learned through that process of development.
Craig Thomas, Technical Sales Manager, Abstrax As one of a very small number of Master Cicerones in the world, Thomas has demonstrated the deepest knowledge of beer styles, process, ingredients, and flavor. Now, he helps brewers reach their flavor goals, whether that's subtle integration or over-the-top intensity.
