What Our Panel Thought
Aroma: “Blackberry, black cherry, light floral honey, a touch of raspberries, and black currant. Light vanilla but not much honey. Low alcohol presentation and light sulfite that begins to take over before fruit notes chime in again.”
Flavor: “Very light floral honey with a moderate sweetness and an aftertaste of slight tannic raspberries, with a touch of residual sweetness, and a light cherry finish. Clean, low astringency, and a light acidity that seems to come from the fruit. Off-dry finish with petillant carbonics, moderate tannic aftertaste and moderate acidity show more of the full fruit.”
Overall: “Easy drinking mead. This is a crisp, clean mead with a light berry fruitiness—black cherry and raspberry notes dominate. Wonderful fruit expression, could use a touch more honey, but very well made for a session mead. Very easy to drink and well balanced. Fruity esters and light carbonation really bring this together.”
What the Brewers Say
“Medium sweet, five parts clover honey, one part wildflower honey, carbonated; black raspberries added after the fermentation is complete.”
