Aroma: “Strong, sharply phenolic Brett character. Funky, tannic notes, sweet pineapple citrus, and some peppery, earthy floral notes. Light smokiness, earthiness, and woody notes are apparent. Tangy sour character with a very earthy background.”
Flavor: “Brettanomyces funk and bright tartness add complexity to the base saison. Medium, almost husky, grain-malt profile with strong, fruity acidity. No hop flavor. Very dry finish and highly carbonated.”
Overall: “A very refreshing, complex Brett character complements and doesn’t overpower a great saison. An excellent Brett beer with bright acidity and a classic, super-dry finish. A great beer to pair with food.”
