Harrop enjoys working with vanilla, and a particular bean from the Congo is among his favorites. He sources his beans from Vanillas of the World, which frequently features new varieties to try—some quite exotic and challenging. Vanilla as an adjunct can be very influential on the flavor, even more than the barrel. Contact time can vary widely, depending on the variety. Harrop will run the recirc pump for days to get the right exposure.
