From mixing very pale pilsner base malts for West Coast–style beers to including malted oats and wheat in hazies, Kelsey lays out his approach to building the grists for hop-forward beers. Among other tips, he discusses selecting for free amino nitrogen (FAN) levels that promote vigorous fermentation, adding some dehusked Carafa to get a bit of color in West Coast IPA, and including some dextrose to help mitigate hop creep.
