For beers that will spend time in two or more barrels, the casks will contribute more character to the beer—so, Harrop adjusts the recipe accordingly. For barleywines, he’s going less for big sweetness and viscosity and more for a balanced but high-ABV approach. Finally, Harrop discusses his CrystAle—a barleywine with a grist of 100 percent crystal malt. As a bonus, we have the recipe.
