Hazelnuts are challenging, but Horus is now known for using them. Harrop wants them charred and almost inedible-looking. He welcomes the butterscotch notes that hazelnuts can bring to a big, sweet stout. It takes a lot of hazelnuts to impart enough character—more even than coconut—and it’s an expensive ingredient. These can steep longer than coffee, a matter of days rather than hours.
