Packaging and Pasteurization

High carbonation often isn’t apparent in these viscous beers. Harrop bottle-conditions many of his non-adjuncted beer, including many of his barleywines, aiming for a deeper flavor over time. He also discusses considerations for pasteurization after packaging and describes how that process works. Every beer also gets tested and analyzed after pasteurization. Finally, Harrop describes how the pasteurization affects the flavor profile in a positive way.
