Tasting and Final Decisions
“It’s all my palate. It’s all what I taste on that given day.”
Harrop allows his palate to guide him when it comes to decisions about how long to age beer, when it’s finished, what ingredients to add, and so on. Those decisions are his most important job in the blendery. He takes notes and keeps a spreadsheet to track how barrels are progressing and make predictions. He’s also studious about testing ABV, with help from local White Labs. When finishing a beer and preparing to package, cleanliness is paramount.
