Coconut is popular among Horus’s club members. Harrop prefers toasted coconut, and he’ll often toast it further himself. He doesn’t want that flavor to be muted. He also works with desiccated coconut, which needs less contact time. Raw coconut, meanwhile, is a little riskier. He also discusses the rich, savory nature of Emperor’s coconut. All types of coconut soak up beer and and reduce yield.
