Different sizes of bourbon barrels are going to affect maturation time. Rye whiskey barrels also contribute a different character than bourbon barrels—and more quickly. Harrop prefers to avoid rum barrels, which can be challenging, but enjoys using barrels from fruit brandies and fortified wines.

With double- and triple-barreled beers (or even quadruple- or quintuple-barrel), he racks straight from barrel to barrel, making the decision on whether to barrel again based on flavor—softer beers may get yet another barrel.
